Ever had Cameroon cuisine?
Me either! Until last night.
It seems that Cameroon has lots of French influence in their diet. Many Cameroon staples include rice, yams, potatoes and beans. I ran across the following recipe and since I already had all the ingredients, it was a shoe-in for dinner!
The spinach, onions are mushrooms are cooked together and flavored with garlic. Keep the onions in large pieces, instead of chopped. You’re supposed to eat this with your fingers. Of course, we just used forks!!!
Cameroon Fried Spinach

Heat the olive oil in a large frying pan over medium-high heat. Add the onions. Once the onions just begin to become soft, add the mushrooms and sauté until they are almost done. Add the spinach, and sprinkle with garlic powder or granules. Stir frequently until all the spinach has wilted.
YUM!
OK – so that really wasn’t a ‘green’ article. But the dish was primarily green!!!
