<p class="MsoNormal"><span style="font-family: Arial; font-size: small;"><span style="font-size: 12pt; font-family: Arial;">Me either!  Until last night.</span></span></p>
<p class="MsoNormal"><span style="font-family: Arial; font-size: small;"><span style="font-size: 12pt; font-family: Arial;">It seems that Cameroon has lots of French influence in their diet.  Many Cameroon staples include rice, yams, potatoes and beans.  I ran across the following recipe and since I already had all the ingredients, it was a shoe-in for dinner!</span></span></p>
<p class="MsoNormal"><span style="font-family: Arial; font-size: small;"><span style="font-size: 12pt; font-family: Arial;">The spinach, onions are mushrooms are cooked together and flavored with garlic.  Keep the onions in large pieces, instead of chopped. You’re supposed to eat this with your fingers.  <em><span style="font-style: italic;">Of course, we just used forks!!!</span></em></span></span></p>

<li><span style="font-family: Arial; color: #333333; font-size: small;"><span style="font-size: 12pt; font-family: Arial; color: #333333;">1 T olive oil</span></span></li>
<li><span style="font-family: Arial; color: #333333; font-size: small;"><span style="font-size: 12pt; font-family: Arial; color: #333333;">Garlic powder or   granules. </span></span></li>

Add the onions. Once the onions just begin to become soft, add the mushrooms and sauté until they are almost done. Add the spinach, and sprinkle with garlic powder or granules.  Stir frequently until all the spinach has wilted.</span></span></p>

<p><span style="font-family: Arial; color: #333333; font-size: small;"><span style="font-size: 12pt; font-family: Arial; color: #333333;">OK – so that really wasn’t a ‘green’ article.  But the dish was primarily green!!!</span></span></p>
